Description
Delightful Raspberry Linzer Cookies with a buttery richness and a tart raspberry jam center, perfect for family gatherings.
Ingredients
Scale
- 1 cup Almond Flour
- 1 cup All-Purpose Flour
- 1/2 cup Unsalted Butter (softened)
- 1/2 cup Granulated Sugar
- 1 cup Powdered Sugar
- 1 Egg
- 1 tsp Vanilla Extract
- 1/2 cup Raspberry Jam
Instructions
- Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
- Cream together the softened butter and granulated sugar until light and fluffy.
- Add in the egg and vanilla extract, mixing well until incorporated.
- Sift together the almond flour and all-purpose flour in a separate bowl, then slowly add this mix to the wet ingredients.
- Knead the dough gently until smooth. If it feels too sticky, refrigerate for about 30 minutes.
- Roll out the dough onto a floured surface to about ¼ inch thick.
- Cut out various shapes using cookie cutters. For half, use a smaller cutter in the center to create a window.
- Bake for 10-12 minutes or until slightly golden.
- Cool completely before spreading raspberry jam on the intact cookies and topping with the cutout cookies, gently pressing together.
- Dust with powdered sugar before serving.
Notes
For a gluten-free option, substitute all-purpose flour with a gluten-free flour blend. Keep butter at room temperature for best results.
