Ingredients

  • 1 cup All-Purpose Flour
  • 1/2 cup Unsalted Butter (softened)
  • 1/2 cup Granulated Sugar
  • 1 cup Powdered Sugar
  • 1 Egg
  • 1 tsp Vanilla Extract
  • 1/2 cup Raspberry Jam

Instructions

  1. Preheat your oven to 350°F (175°C) and line your baking sheets with parchment paper.
  2. Cream together the softened butter and granulated sugar until light and fluffy.
  3. Add in the egg and vanilla extract, mixing well until incorporated.
  4. Sift together the almond flour and all-purpose flour in a separate bowl, then slowly add this mix to the wet ingredients.
  5. Knead the dough gently until smooth. If it feels too sticky, refrigerate for about 30 minutes.
  6. Roll out the dough onto a floured surface to about ¼ inch thick.
  7. Cut out various shapes using cookie cutters. For half, use a smaller cutter in the center to create a window.
  8. Bake for 10-12 minutes or until slightly golden.
  9. Cool completely before spreading raspberry jam on the intact cookies and topping with the cutout cookies, gently pressing together.
  10. Dust with powdered sugar before serving.

Notes

For a gluten-free option, substitute all-purpose flour with a gluten-free flour blend. Keep butter at room temperature for best results.
