Description
A rich and moist Red Velvet Poke Cake draped in cream cheese frosting, perfect for any celebration or romantic dinner.
Ingredients
Scale
- 1 red velvet cake mix
- 3 large eggs
- ½ cup vegetable oil (or melted coconut oil)
- 1 cup buttermilk (or whole/almond milk with vinegar)
- 1 cup cream cheese, softened (or mascarpone)
- 2 cups powdered sugar (can substitute half with erythritol)
- 1 tsp vanilla extract
- ¼ cup unsweetened cocoa powder
- ¼ cup milk (plant-based options work too)
Instructions
- Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
- In a large bowl, combine the cake mix and cocoa powder.
- Mix in the eggs, vegetable oil, and buttermilk until smooth.
- Pour the mixture into the baking pan and bake for 25-30 minutes or until a toothpick comes out clean.
- Once cooled, use the handle of a wooden spoon to poke holes throughout the cake.
- Prepare your glaze, mixing equal parts of sweetened condensed milk with a splash of vanilla, and pour over the cake.
- Whip together the cream cheese, remaining vanilla, and powdered sugar until fluffy, and frost the top generously.
- Refrigerate for at least one hour to allow flavors to meld before serving.
Notes
For best texture, check the cake intermittently while baking and avoid overbaking. Ensure cream cheese is at room temperature for smooth frosting.
