- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2 cups chicken broth
- 1 cup sour cream
- 2 tbsp Dijon mustard
- 1/4 cup fresh parsley or dill, chopped
- Egg noodles or rice, for serving
- Salt and pepper, to taste
- Olive oil, for cooking
Instructions
- Prepare your ingredients: Chop chicken into bite-sized pieces and clean mushrooms thoroughly. Mince garlic and chop onion.
- Sauté the chicken: In a skillet over medium heat, heat olive oil. Add chicken, season with salt and pepper, and cook until golden brown, about 5-7 minutes. Remove and set aside.
- Cook the aromatics: In the same skillet, add more oil if needed. Toss in chopped onion and mushrooms; sauté until softened, about 5 minutes. Add garlic and cook for an additional minute.
- Create the sauce: Stir in chicken broth and Dijon mustard; bring to a low boil. Reduce heat and simmer, then whisk in sour cream until smooth.
- Combine and serve: Return chicken to skillet and simmer in the creamy sauce for 5-10 minutes. Stir in fresh herbs just before serving over egg noodles or rice.
