- 1/2 cup feta cheese, crumbled
- 3 tablespoons honey
- 2 tablespoons fresh thyme, plus more for garnish
- 2 tablespoons extra virgin olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and peel the sweet potatoes, then cut them into even rounds about ½-inch thick.
- Toss the sweet potato rounds with olive oil, salt, and pepper in a large mixing bowl.
- Spread the seasoned rounds in a single layer on a parchment-lined baking sheet.
- Roast for 25–30 minutes, flipping halfway through, until fork-tender and golden-brown.
- Drizzle honey over the rounds and sprinkle crumbled feta on top in the last 5 minutes of roasting.
- Garnish with fresh thyme before serving warm.
Notes
For best flavor, make sure to use high-quality feta and adjust seasoning to your preference. Maple syrup can be used as a substitute for honey if desired.
