Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and peel the sweet potatoes, then cut them into even rounds about ½-inch thick.
  3. Toss the sweet potato rounds with olive oil, salt, and pepper in a large mixing bowl.
  4. Spread the seasoned rounds in a single layer on a parchment-lined baking sheet.
  5. Roast for 25–30 minutes, flipping halfway through, until fork-tender and golden-brown.
  6. Drizzle honey over the rounds and sprinkle crumbled feta on top in the last 5 minutes of roasting.
