Ingredients

  • 1 butternut squash, peeled and diced
  • Steak (ribeye or sirloin), seasoned
  • Fresh garlic, minced
  • Herbs (thyme, rosemary, or parsley)
  • Olive oil
  • Salt and pepper
  • Mushrooms, sliced (cremini or shiitake)
  • Optional toppings: avocado, feta, or sour cream

Instructions

  1. Preheat oven to 400°F (200°C). Peel and dice the butternut squash into 1-inch cubes. Mince the garlic.
  2. Toss the diced butternut squash with olive oil, salt, and pepper on a baking sheet. Roast for 20-25 minutes, until tender.
  3. While the squash roasts, season steak and heat a skillet over medium-high heat. Cook steak for 3-5 minutes each side. Let rest before slicing.
  4. In the same skillet, lower heat and add olive oil if needed. Sauté minced garlic and sliced mushrooms until golden.
  5. Layer roasted squash, sliced steak, and sautéed garlic mushrooms in a bowl. Sprinkle with fresh herbs before serving.
