Ingredients

- 1 butternut squash, peeled and diced
- Steak (ribeye or sirloin), seasoned
- Fresh garlic, minced
- Herbs (thyme, rosemary, or parsley)
- Olive oil
- Salt and pepper
- Mushrooms, sliced (cremini or shiitake)
- Optional toppings: avocado, feta, or sour cream
Instructions
- Preheat oven to 400°F (200°C). Peel and dice the butternut squash into 1-inch cubes. Mince the garlic.
- Toss the diced butternut squash with olive oil, salt, and pepper on a baking sheet. Roast for 20-25 minutes, until tender.
- While the squash roasts, season steak and heat a skillet over medium-high heat. Cook steak for 3-5 minutes each side. Let rest before slicing.
- In the same skillet, lower heat and add olive oil if needed. Sauté minced garlic and sliced mushrooms until golden.
- Layer roasted squash, sliced steak, and sautéed garlic mushrooms in a bowl. Sprinkle with fresh herbs before serving.
