  • 2 cups panko breadcrumbs
  • 1/4 cup fresh parsley, finely chopped
  • 1/4 cup fresh basil or chives, finely chopped
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Vegetable or olive oil for frying

Instructions

  1. Prepare the mushrooms by cleaning them gently with a damp cloth.
  2. Set up a dredging station with three bowls: flour seasoned with salt and pepper, whisked eggs, and a mix of panko breadcrumbs and chopped herbs.
  3. Coat each mushroom in flour, then dip it in the egg wash, and finally roll it in the breadcrumb mixture.
  4. Heat about ½ inch of oil in a large skillet over medium-high heat.
  5. Fry the mushrooms in batches for 2-3 minutes on each side until golden brown.
  6. Drain the fried mushrooms on paper towels to absorb excess oil.
