- 8 oz fresh mushrooms (shiitake, cremini, or button)
- 1 cup all-purpose flour
- 2 large eggs (or 1/4 cup ground flaxseed mixed with water for vegan option)
- 2 cups panko breadcrumbs
- 1/4 cup fresh parsley, finely chopped
- 1/4 cup fresh basil or chives, finely chopped
- 2 cloves garlic, minced
- Salt and pepper to taste
- Vegetable or olive oil for frying
Instructions
- Prepare the mushrooms by cleaning them gently with a damp cloth.
- Set up a dredging station with three bowls: flour seasoned with salt and pepper, whisked eggs, and a mix of panko breadcrumbs and chopped herbs.
- Coat each mushroom in flour, then dip it in the egg wash, and finally roll it in the breadcrumb mixture.
- Heat about ½ inch of oil in a large skillet over medium-high heat.
- Fry the mushrooms in batches for 2-3 minutes on each side until golden brown.
- Drain the fried mushrooms on paper towels to absorb excess oil.
- Serve hot with a dipping sauce of your choice.
Notes
For added richness, a touch of butter can be mixed with the frying oil. Adjust seasoning to your taste.
