Description
A delightful treat featuring crispy fried mushrooms coated in a zesty herb infusion, perfect for family gatherings or casual dinners.
Ingredients
Scale
- Mushrooms (cremini or shiitake, or substitutes like portobello or oyster)
- Flour
- Cornstarch
- Salt
- Black pepper
- Fresh parsley
- Fresh thyme
- Fresh chives
- Garlic cloves
- Zest of 1 lemon
- Juice of 1 lemon
- Olive oil (for frying)
Instructions
- Begin by cleaning the mushrooms gently with a damp paper towel. Trim the stems but keep them whole.
- In a mixing bowl, combine flour, cornstarch, salt, pepper, and any additional spices you desire.
- Dredge the cleaned mushrooms in the flour mixture, ensuring they’re entirely coated.
- Heat olive oil over medium-high heat in a large skillet, covering the bottom generously.
- When the oil is hot, carefully add the mushrooms to the skillet in batches.
- Fry each side for about 3-4 minutes or until golden brown.
- Remove the mushrooms and place them on a paper towel-lined plate to absorb excess oil.
- In a separate bowl, whisk together chopped herbs, minced garlic, lemon zest, and juice. Drizzle this over the crispy mushrooms before serving.
- Allow the mushrooms to sit for a minute in the herb infusion before serving to meld the flavors.
Notes
You can customize the herb infusion to your taste with lemon or chili. Letting the mushrooms rest after frying keeps them crispy.
