- 2 cups bell peppers, chopped
- 2 cups kale, chopped
- 1 medium onion, diced
- 4 cloves garlic, minced
- 6 cups vegetable broth
- 2 tablespoons olive oil
- 1 tablespoon fresh oregano (or 1 teaspoon dried)
- 1 tablespoon fresh basil (or 1 teaspoon dried)
- 1 tablespoon fresh thyme (or 1 teaspoon dried)
- Juice of 1 lemon
- Salt and pepper to taste
Instructions
- Prep your vegetables by washing and chopping them into bite-sized pieces.
- Heat olive oil in a large pot over medium heat, then add diced onion and minced garlic. Sauté until fragrant.
- Pour in the vegetable broth and chopped tomatoes, bringing to a gentle simmer.
- Add chopped carrots, zucchini, and bell peppers. Stir and let simmer for about 15 minutes.
- Mix in chopped kale and lemon juice during the last few minutes of cooking. Season with salt and pepper.
- Serve each bowl drizzled with olive oil and garnished with parsley if desired.
Notes
Allow flavors to meld by letting the soup sit for a day before serving. This soup freezes well for up to 3 months.
