  • 6 cups vegetable broth
  • 2 tablespoons olive oil
  • 1 tablespoon fresh oregano (or 1 teaspoon dried)
  • 1 tablespoon fresh basil (or 1 teaspoon dried)
  • 1 tablespoon fresh thyme (or 1 teaspoon dried)
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. Prep your vegetables by washing and chopping them into bite-sized pieces.
  2. Heat olive oil in a large pot over medium heat, then add diced onion and minced garlic. Sauté until fragrant.
  3. Pour in the vegetable broth and chopped tomatoes, bringing to a gentle simmer.
  4. Add chopped carrots, zucchini, and bell peppers. Stir and let simmer for about 15 minutes.
  5. Mix in chopped kale and lemon juice during the last few minutes of cooking. Season with salt and pepper.
  6. Serve each bowl drizzled with olive oil and garnished with parsley if desired.
