- 2 medium to large sweet potatoes
- 1 lb lean ground turkey
- 1 medium onion, diced
- 2 cloves garlic, minced
- Fresh or dried herbs (thyme, rosemary, or Italian seasoning)
- 1/2 tsp paprika (optional)
- 1 cup diced vegetables (bell peppers, spinach, or zucchini)
- Shredded cheese (optional)
- Olive oil
- Salt and pepper to taste
Instructions
- Preheat the oven to 400°F (200°C). Poke holes in each sweet potato with a fork and bake for about 45–60 minutes until tender.
- While the sweet potatoes bake, heat olive oil in a skillet over medium heat. Sauté the onion until translucent, about 3–5 minutes, then add minced garlic for another minute.
- Stir in the ground turkey, seasoning with salt, pepper, and herbs. Cook until browned, about 8–10 minutes.
- If using additional vegetables, add them a minute or two before the turkey is done to retain crunch.
- Mix in any optional ingredients like cheese or spinach until just wilted.
- Carefully slice each sweet potato down the middle and fluff the inside with a fork. Fill each potato with the turkey mixture.
- If adding cheese, return potatoes to the oven for an additional 10 minutes until cheese is bubbly and golden.
- Let cool slightly before serving. Optionally, top with sour cream or fresh herbs.
Notes
Sweet potatoes can be swapped for acorn squash or bell peppers; ground turkey can be substituted with ground chicken, beef, or plant-based meat.
