- 8 cups cubed hearty bread (sourdough or whole grain)
- 2 cups chopped mushrooms (cremini, shiitake, or button)
- 1 cup chopped onions
- 1 cup chopped celery
- 4 cups vegetable broth
- 2 tablespoons fresh sage, chopped
- 1 tablespoon fresh thyme, chopped
- 1 tablespoon fresh rosemary, chopped
- 2 cloves garlic, minced
- 3 tablespoons olive oil or vegan butter
- Salt and pepper to taste
Instructions
- Prep the bread by cutting it into cubes and letting them dry overnight, or toast in the oven for about 10 minutes.
- Sauté the onions and celery in olive oil over medium heat until translucent, about 5 minutes. Stir in garlic and mushrooms, cooking until mushrooms are tender.
- Add the herbs, salt, and pepper, allowing the aroma to fill your kitchen.
- Combine the sautéed mixture with the bread cubes in a large bowl. Gradually add vegetable broth, mixing gently until the bread is moist but not soggy.
- Bake in a 350°F (175°C) preheated oven. Transfer to a baking dish, cover with foil, and bake for 30 minutes. Remove foil and bake for an additional 15 minutes for a golden crust.
- Serve warm, garnished with fresh herbs.
