Ingredients

  • 3 lbs bone-in short ribs
  • 3 carrots, diced
  • 2 potatoes, diced
  • 1 onion, diced
  • 4 cloves garlic, minced
  • 4 cups beef broth
  • 1 cup red wine
  • 2 bay leaves
  • 2 sprigs fresh thyme
  • Salt and pepper, to taste
  • 1 tbsp Worcestershire sauce
  • Olive oil, for browning

Instructions

  1. Prepare the Short Ribs: Pat the short ribs dry and season with salt and pepper. Heat oil in a pot over medium-high heat and sear short ribs until browned on all sides. Remove and set aside.
  2. Sauté the Aromatics: In the same pot, sauté diced onion and garlic until translucent.
  3. Add Vegetables: Incorporate chopped carrots and potatoes, sauté for another 5 minutes.
  4. Deglaze the Pot: Pour in red wine, scraping brown bits from the pot, and let reduce for a few minutes.
  5. Simmer the Stew: Return short ribs, add beef broth and herbs, cover, and simmer for 2 to 3 hours.
  6. Final Touches: Adjust seasoning as needed and remove lid for the last 30 minutes to thicken if desired.
  7. Serve and Enjoy: Serve in bowls, garnished with freshly chopped parsley and with crusty bread.

Notes

For a lighter version, use vegetable broth instead of beef broth and include more vegetables.
