- 3 lbs bone-in short ribs
- 3 carrots, diced
- 2 potatoes, diced
- 1 onion, diced
- 4 cloves garlic, minced
- 4 cups beef broth
- 1 cup red wine
- 2 bay leaves
- 2 sprigs fresh thyme
- Salt and pepper, to taste
- 1 tbsp Worcestershire sauce
- Olive oil, for browning
Instructions
- Prepare the Short Ribs: Pat the short ribs dry and season with salt and pepper. Heat oil in a pot over medium-high heat and sear short ribs until browned on all sides. Remove and set aside.
- Sauté the Aromatics: In the same pot, sauté diced onion and garlic until translucent.
- Add Vegetables: Incorporate chopped carrots and potatoes, sauté for another 5 minutes.
- Deglaze the Pot: Pour in red wine, scraping brown bits from the pot, and let reduce for a few minutes.
- Simmer the Stew: Return short ribs, add beef broth and herbs, cover, and simmer for 2 to 3 hours.
- Final Touches: Adjust seasoning as needed and remove lid for the last 30 minutes to thicken if desired.
- Serve and Enjoy: Serve in bowls, garnished with freshly chopped parsley and with crusty bread.
Notes
For a lighter version, use vegetable broth instead of beef broth and include more vegetables.
