- 1 cup old-fashioned oats
- 1 cup cottage cheese (low-fat or full-fat)
- 1/4 cup honey or maple syrup
- 2 large eggs
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- Optional mix-ins: fresh berries, chopped nuts, chocolate chips, or spices
Instructions
- Preheat your oven to 350°F (175°C).
- Prepare muffin tins by greasing or lining with muffin liners.
- Mix dry ingredients: whisk together oats, baking powder, baking soda, and salt.
- Combine wet ingredients: mix cottage cheese, eggs, and honey in another bowl.
- Fold the wet mixture into the dry ingredients, being careful not to overmix.
- Add mix-ins if desired.
- Fill muffin tins about 2/3 full with batter.
- Bake for 20-25 minutes until golden and a toothpick comes out clean.
- Cool in the tin for a few minutes before transferring to a wire rack.
Notes
Let ingredients come to room temperature for even mixing. Avoid overmixing the batter for tender muffins.
