  • 1/4 cup honey or maple syrup
  • 2 large eggs
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • Optional mix-ins: fresh berries, chopped nuts, chocolate chips, or spices

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Prepare muffin tins by greasing or lining with muffin liners.
  3. Mix dry ingredients: whisk together oats, baking powder, baking soda, and salt.
  4. Combine wet ingredients: mix cottage cheese, eggs, and honey in another bowl.
  5. Fold the wet mixture into the dry ingredients, being careful not to overmix.
  6. Add mix-ins if desired.
  7. Fill muffin tins about 2/3 full with batter.
  8. Bake for 20-25 minutes until golden and a toothpick comes out clean.
  9. Cool in the tin for a few minutes before transferring to a wire rack.
