A vibrant and refreshing salad featuring smashed cucumbers, a flavorful dressing, and fresh herbs, perfect for summer gatherings.
Ingredients
Scale
- 4 firm cucumbers
- 2 cloves fresh garlic
- 3 tablespoons low-sodium soy sauce
- 2 tablespoons rice vinegar
- 1 tablespoon toasted sesame oil
- 1/2 teaspoon chili flakes
- 2 tablespoons toasted sesame seeds
- 1/4 cup fresh herbs (cilantro or mint)
Instructions
- Prepare the cucumbers by washing them. Cut into quarters and smash each piece with the side of a knife or rolling pin.
- Create the dressing by whisking together soy sauce, rice vinegar, and sesame oil. Add chili flakes if desired.
- Mince the garlic and add it to the dressing, followed by the toasted sesame seeds.
- Combine the smashed cucumbers with the dressing, mixing gently.
- Garnish with finely chopped fresh herbs.
- Let the salad marinate for 10-15 minutes before serving to enhance flavors.
- Serve chilled or at room temperature.
Notes
Smashing the cucumbers increases surface area for the dressing and enhances flavor absorption. Adjust seasoning to your taste.
