Description

A vibrant and refreshing salad featuring smashed cucumbers, a flavorful dressing, and fresh herbs, perfect for summer gatherings.

Ingredients

Scale
  • 4 firm cucumbers
  • 2 cloves fresh garlic
  • 3 tablespoons low-sodium soy sauce
  • 2 tablespoons rice vinegar
  • 1 tablespoon toasted sesame oil
  • 1/2 teaspoon chili flakes
  • 2 tablespoons toasted sesame seeds
  • 1/4 cup fresh herbs (cilantro or mint)

Instructions

  1. Prepare the cucumbers by washing them. Cut into quarters and smash each piece with the side of a knife or rolling pin.
  2. Create the dressing by whisking together soy sauce, rice vinegar, and sesame oil. Add chili flakes if desired.
  3. Mince the garlic and add it to the dressing, followed by the toasted sesame seeds.
  4. Combine the smashed cucumbers with the dressing, mixing gently.
  5. Garnish with finely chopped fresh herbs.
  6. Let the salad marinate for 10-15 minutes before serving to enhance flavors.
  7. Serve chilled or at room temperature.

Notes

Smashing the cucumbers increases surface area for the dressing and enhances flavor absorption. Adjust seasoning to your taste.
