- 500g bread flour
- 100g rolled oats
- 350g warm water
- 100g honey
- 10g salt
- Active sourdough starter
Instructions
- Ensure your sourdough starter is bubbly and active; feed it 4-6 hours before baking.
- In a large bowl, combine bread flour, rolled oats, and warm water until shaggy dough forms.
- Add honey and salt; knead the dough until combined and smooth.
- Cover and let rise at room temperature for 4-6 hours, stretching and folding every 30 minutes.
- Shape the dough into a round loaf and place it in a floured banneton seam side up.
- Cover and let it rest for another 2-3 hours.
- Preheat the oven to 450°F (232°C) with a Dutch oven inside for about 30 minutes.
- Transfer the dough onto parchment paper, place into the hot Dutch oven, cover, and bake for 30 minutes.
- Remove the lid and bake for an additional 15-20 minutes until golden brown.
- Cool completely before slicing.
Notes
For added crunch, consider mixing in flaxseeds or sunflower seeds. A good-quality Dutch oven is recommended for best results.
