Ingredients

  • 500g bread flour
  • 100g rolled oats
  • 350g warm water
  • 100g honey
  • 10g salt
  • Active sourdough starter

Instructions

  1. Ensure your sourdough starter is bubbly and active; feed it 4-6 hours before baking.
  2. In a large bowl, combine bread flour, rolled oats, and warm water until shaggy dough forms.
  3. Add honey and salt; knead the dough until combined and smooth.
  4. Cover and let rise at room temperature for 4-6 hours, stretching and folding every 30 minutes.
  5. Shape the dough into a round loaf and place it in a floured banneton seam side up.
  6. Cover and let it rest for another 2-3 hours.
  7. Preheat the oven to 450°F (232°C) with a Dutch oven inside for about 30 minutes.
  8. Transfer the dough onto parchment paper, place into the hot Dutch oven, cover, and bake for 30 minutes.
  9. Remove the lid and bake for an additional 15-20 minutes until golden brown.
  10. Cool completely before slicing.

Notes

For added crunch, consider mixing in flaxseeds or sunflower seeds. A good-quality Dutch oven is recommended for best results.
