Instructions

  1. Preheat your oven to 350°F (175°C). In a mixing bowl, combine graham cracker crumbs and melted butter until the crumbs are evenly coated. Press the mixture tightly into a greased baking dish to form a crust. Bake for 8-10 minutes, or until lightly golden, then set aside to cool.
  2. In a large bowl, beat the cream cheese until smooth. Gradually add sugar, mixing until well incorporated. Then, stir in sour cream, champagne, and vanilla extract—continue to mix until the mixture is creamy and free of lumps.
  3. Gently fold in chopped fresh strawberries, ensuring they’re evenly distributed throughout the cheesecake.
  4. Pour the cheesecake filling over the cooled crust, smoothing the top with a spatula. Bake for approximately 25-30 minutes or until set. The edges should be firm but the center slightly jiggly. Let it cool at room temperature before transferring it to the fridge to chill for at least 240 minutes—this allows flavors to meld beautifully.
  5. Once chilled, cut into bars and garnish with additional strawberries and a sprinkle of powdered sugar, if desired.
