  • 1 ½ cups mashed fresh strawberries

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, combine graham crackers, melted butter, and sugar. Press mixture into a greased 9×9-inch baking pan. Bake for 10 minutes and let cool.
  2. In a large bowl, beat cream cheese and 1 cup sugar until smooth. Add eggs, vanilla extract, and champagne, mixing until blended. Gently fold in strawberries.
  3. Pour the cheesecake filling over the cooled crust. Bake for 30–35 minutes until the edges are set and the center jiggles slightly. Cool in the oven for 1 hour.
  4. Refrigerate for at least 4 hours or overnight. Slice into squares to serve, garnishing with fresh strawberries and optional chocolate or whipped cream.
