  • 23 fresh jalapeños, sliced
  • 12 bell peppers, sliced
  • 4 cloves garlic, minced
  • 3 tbsp soy sauce
  • 1 tbsp fresh ginger, minced
  • 1 onion, sliced
  • 2 tbsp olive oil or sesame oil
  • Fresh cilantro, for garnish

Instructions

  1. Begin by prepping your ingredients. Chop the chicken into bite-sized pieces and slice the jalapeños, bell peppers, garlic, onion, and ginger.
  2. Heat a large skillet or wok over medium-high heat. Add a drizzle of olive oil or sesame oil.
  3. Once the oil is shimmering, toss in the onions and garlic. Sauté until fragrant, about 1-2 minutes.
  4. Next, add in the chicken pieces and cook until they’re browned and cooked through, around 5-7 minutes.
  5. Toss in the sliced jalapeños and bell peppers. Stir-fry everything together for an additional 2-3 minutes.
  6. Finally, drizzle soy sauce over the mixture. Finish with a sprinkle of fresh cilantro.
  7. Serve hot over rice or noodles.

Notes
