Ingredients

- 1 lb boneless chicken thighs or breasts
- 2–3 fresh jalapeños, sliced
- 1–2 bell peppers, sliced
- 4 cloves garlic, minced
- 3 tbsp soy sauce
- 1 tbsp fresh ginger, minced
- 1 onion, sliced
- 2 tbsp olive oil or sesame oil
- Fresh cilantro, for garnish
Instructions
- Begin by prepping your ingredients. Chop the chicken into bite-sized pieces and slice the jalapeños, bell peppers, garlic, onion, and ginger.
- Heat a large skillet or wok over medium-high heat. Add a drizzle of olive oil or sesame oil.
- Once the oil is shimmering, toss in the onions and garlic. Sauté until fragrant, about 1-2 minutes.
- Next, add in the chicken pieces and cook until they’re browned and cooked through, around 5-7 minutes.
- Toss in the sliced jalapeños and bell peppers. Stir-fry everything together for an additional 2-3 minutes.
- Finally, drizzle soy sauce over the mixture. Finish with a sprinkle of fresh cilantro.
- Serve hot over rice or noodles.
Notes
For extra spice, adjust the number of jalapeños to your taste. This dish can also be customized with shrimp, tofu, or beef.
