- 2 cups fresh spinach, chopped
- 1 cup cheese (feta or cream cheese)
- 2 cloves garlic, minced
- 1 small onion, chopped
- 2 tablespoons fresh herbs (parsley or dill)
- 1 package empanada dough or homemade from 2 cups flour and 1/2 cup butter
- Salt and pepper to taste
- Olive oil for sautéing
Instructions
- Prepare the Filling: Heat olive oil in a skillet over medium heat. Sauté onions and garlic until fragrant. Add spinach, cooking until wilted. Mix in cheese and season with salt, pepper, and herbs.
- Make the Dough: Combine flour and salt in a bowl. Cut in cold butter until crumbly. Add cold water gradually until the dough holds together. Let rest for 30 minutes.
- Assemble Empanadas: Roll out the dough, cut into 5-6 inch rounds, fill with mixture, fold and seal edges.
- Cook: Bake at 375°F for 20-25 minutes or fry in hot oil until golden.
- Serve with your choice of dipping sauces.
