- 8 Medjool dates, pitted and chopped
- 1 ½ cups all-purpose flour
- ½ cup unsalted butter, softened
- 1 cup brown sugar
- 2 large eggs
- 1 tsp baking soda
- 1 tsp vanilla extract
- 1 cup heavy cream
- 2 tbsp molasses (optional)
Instructions
- Prepare the dates: Soak chopped dates in boiling water for 10 minutes.
- Preheat your oven to 350°F (175°C).
- Cream the butter and brown sugar until fluffy, then add eggs one at a time.
- Whisk flour and baking soda in a bowl, then fold into the wet mixture along with the dates.
- Pour the batter into a greased baking dish and bake for 30-35 minutes.
- Combine the sauce ingredients in a saucepan and simmer until thickened, about 5-10 minutes.
- Serve the pudding warm with toffee sauce on top and optional whipped cream or vanilla ice cream.
Notes
For variations, add chocolate chips or orange zest. Use prunes instead of dates for sweetness, and consider gluten-free flour for a gluten-free version.
