- 2 cans of yams
- 1/2 cup brown sugar
- 2 eggs
- 1/2 cup milk
- 1/4 cup unsalted butter, melted
- 1 tsp vanilla extract
- 1 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1 cup chopped pecans or walnuts
- 1/4 cup brown sugar for topping
- 2 tbsp melted butter for topping
Instructions
- Preheat your oven to 350°F (175°C).
- Drain the canned yams and place them in a large mixing bowl. Mash until smooth.
- Stir in the brown sugar, eggs, milk, melted butter, vanilla extract, and spices until well combined.
- Pour the yam mixture into a greased casserole dish and smooth the top.
- Combine the chopped nuts, brown sugar, and melted butter for the topping in a separate bowl. Mix and sprinkle evenly over the casserole.
- Bake for 25-30 minutes, or until the topping is golden brown and the casserole is bubbling.
- Let it sit for a few minutes before serving.
Notes
For a vegan option, replace eggs with applesauce and milk with almond milk. Allow the casserole to cool and set for easier serving.
