Description

A comforting and nostalgic Sweet Potato Casserole made with canned yams, brown sugar, and topped with a crunchy mixture of pecans and spices.


Ingredients

  • 2 cans of yams
  • 1/2 cup brown sugar
  • 2 eggs
  • 1/2 cup milk
  • 1/4 cup unsalted butter, melted
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1 cup chopped pecans or walnuts
  • 1/4 cup brown sugar for topping
  • 2 tbsp melted butter for topping

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Drain the canned yams and place them in a large mixing bowl. Mash until smooth.
  3. Stir in the brown sugar, eggs, milk, melted butter, vanilla extract, and spices until well combined.
  4. Pour the yam mixture into a greased casserole dish and smooth the top.
  5. Combine the chopped nuts, brown sugar, and melted butter for the topping in a separate bowl. Mix and sprinkle evenly over the casserole.
  6. Bake for 25-30 minutes, or until the topping is golden brown and the casserole is bubbling.
  7. Let it sit for a few minutes before serving.

Notes

For a vegan option, replace eggs with applesauce and milk with almond milk. Allow the casserole to cool and set for easier serving.
