Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Peel and cube sweet potatoes, then steam or boil until tender and mash until smooth.
  3. Whisk together cornmeal, flour, baking powder, and salt in a large bowl.
  4. Combine mashed sweet potatoes, milk, eggs, and melted butter in another bowl.
  5. Pour the wet mixture into the dry ingredients and stir gently until just combined.
  6. Spread the batter in a greased 9-inch baking dish and bake for 25-30 minutes.
  7. Cool for 10 minutes before slicing and serve warm.
