A comforting and delicious Sweet Potato & Cranberry Gratin, perfect for family gatherings and holiday feasts, featuring layers of sweet potatoes, tart cranberries, and a creamy, cheesy sauce.

- 4 medium Sweet Potatoes, peeled and sliced into 1/4-inch rounds
- 2 cups Fresh Cranberries
- 1 cup Heavy Cream (or half-and-half for a lighter version)
- 1 cup Sharp Cheddar or Gruyère Cheese, shredded
- 4 tablespoons Salted Butter
- 1 medium Onion, finely chopped
- 2 cloves Garlic, minced
- 1 teaspoon Fresh Thyme or Rosemary (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- Prepare the sweet potatoes by peeling and slicing them into even, thin rounds.
- Sauté aromatic ingredients by melting butter in a skillet, then adding onions and garlic, cooking until golden.
- Make the sauce by pouring in heavy cream, and whisking in cheese until melted.
- Layer the dish with sweet potato slices, cranberries, creamy sauce, and herbs in between layers.
- Finish by pouring the remaining sauce and topping with cheese.
- Bake covered with foil for 30 minutes, then uncover and bake for another 15-20 minutes until golden.
- Rest for 10 minutes before serving to set the layers.
Notes
For added flavor, experiment with different herbs or spices. This dish can also be made in advance and reheated.
