Description

A comforting and delicious Sweet Potato & Cranberry Gratin, perfect for family gatherings and holiday feasts, featuring layers of sweet potatoes, tart cranberries, and a creamy, cheesy sauce.


Ingredients

  • 4 medium Sweet Potatoes, peeled and sliced into 1/4-inch rounds
  • 2 cups Fresh Cranberries
  • 1 cup Heavy Cream (or half-and-half for a lighter version)
  • 1 cup Sharp Cheddar or Gruyère Cheese, shredded
  • 4 tablespoons Salted Butter
  • 1 medium Onion, finely chopped
  • 2 cloves Garlic, minced
  • 1 teaspoon Fresh Thyme or Rosemary (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Prepare the sweet potatoes by peeling and slicing them into even, thin rounds.
  3. Sauté aromatic ingredients by melting butter in a skillet, then adding onions and garlic, cooking until golden.
  4. Make the sauce by pouring in heavy cream, and whisking in cheese until melted.
  5. Layer the dish with sweet potato slices, cranberries, creamy sauce, and herbs in between layers.
  6. Finish by pouring the remaining sauce and topping with cheese.
  7. Bake covered with foil for 30 minutes, then uncover and bake for another 15-20 minutes until golden.
  8. Rest for 10 minutes before serving to set the layers.

Notes

For added flavor, experiment with different herbs or spices. This dish can also be made in advance and reheated.
