Ingredients
Scale
- 2 medium Sweet potatoes, peeled and chopped
- 1 cup All-purpose flour (or whole wheat/flour alternative)
- 2 large Eggs (or flax eggs for vegan option)
- 1 cup Milk (dairy or plant-based)
- 2 tsp Baking powder
- 1 tsp Cinnamon
- 1/2 tsp Nutmeg
- 1/2 tsp Salt
Instructions
- Prepare your sweet potatoes: Boil or steam them until tender, then mash until smooth.
- Mix the dry ingredients: Whisk together flour, baking powder, spices, and salt in a bowl.
- Combine wet ingredients: In a separate bowl, mix mashed sweet potatoes, eggs, and milk until well blended.
- Combine mixtures: Gradually incorporate the dry ingredients into the wet until just combined; a few lumps are fine.
- Heat your skillet: Preheat a nonstick skillet over medium-low heat, lightly greased with butter or oil.
- Cook the pancakes: Pour about 1/4 cup of batter for each pancake; cook until bubbles form, about 2-3 minutes, then flip until golden brown.
- Serve warm: Stack and serve with maple syrup, fresh fruit, or yogurt.
Notes
Let the batter rest for 10 minutes for fluffier pancakes. If you prefer thicker pancakes, add a bit more flour.
