- 2 medium Sweet Potatoes, sliced into 1/4-inch rounds
- 1 cup Brie Cheese, sliced
- 1/2 cup Dried Cranberries
- 1/2 cup Pecans, toasted
- 2 tablespoons Olive Oil

- Freshly Ground Pepper, to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Slice the sweet potatoes into 1/4-inch thick rounds.
- Season the rounds with olive oil, salt, and pepper.
- Roast the sweet potato rounds for about 25-30 minutes, flipping halfway through.
- Add slices of brie on top of each round and return to the oven for an additional 5-8 minutes.
- Finish by adding dried cranberries and toasted pecans in the last few minutes of baking.
