  • 1/2 cup Dried Cranberries

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Slice the sweet potatoes into 1/4-inch thick rounds.
  3. Season the rounds with olive oil, salt, and pepper.
  4. Roast the sweet potato rounds for about 25-30 minutes, flipping halfway through.
  5. Add slices of brie on top of each round and return to the oven for an additional 5-8 minutes.
