  • ½ cup unsalted butter, melted
  • ¼ cup granulated sugar (for crust)
  • 16 ounces cream cheese, softened
  • 1 cup granulated sugar (for filling)
  • 2 large eggs
  • ½ cup fresh lemon juice
  • Zest of 2 lemons

Instructions

  1. Preheat the oven to 325°F (165°C).
  2. In a bowl, mix graham cracker crumbs, melted butter, and ¼ cup sugar. Press into a greased 9×9-inch pan and bake for 10 minutes.
  3. In a large bowl, beat cream cheese until smooth. Add 1 cup sugar and mix until creamy. Add eggs one at a time, mixing well. Stir in lemon juice and zest until combined.
  4. Pour two-thirds of the filling over the crust. In a separate bowl, mix the remaining filling with an additional ¼ cup lemon juice and zest. Drizzle over the first layer and create swirls.
  5. Bake for 25-30 minutes until edges are set and center is slightly wobbly. Let cool completely, then chill in the fridge for at least 4 hours.
  6. Cut into bars, dust with powdered sugar, and serve chilled.
