- 1 lb ground turkey
- 1 cup fresh cranberries (or dried cranberries)
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 cup bread crumbs
- 2 eggs
- 1 tsp fresh thyme
- 1 tsp fresh rosemary
- 1 cup chicken broth
- 3 tbsp butter
- 2 tbsp flour
Instructions
- Preheat your oven to 350°F (175°C) and grease a loaf pan with butter.
- In a large bowl, combine the ground turkey, chopped onion, minced garlic, cranberries, bread crumbs, and herbs. Crack in the eggs and mix gently.
- Transfer the mixture into the greased loaf pan, shaping it into a loaf.
- Bake for 50-60 minutes or until the internal temperature reaches 165°F (74°C).
- While the meatloaf bakes, prepare the gravy by melting butter in a saucepan over medium heat. Whisk in flour to make a roux and cook for about 1-2 minutes.
- Gradually whisk in the chicken broth, simmering until thickened. Season with salt and pepper to taste.
- Once the meatloaf is done, let it rest for about 10 minutes before slicing.
- Serve with a drizzle of gravy over the meatloaf.
Notes
Substitutions: Use ground chicken instead of turkey or oatmeal for a gluten-free option. Fresh cranberries can be substituted with cranberry sauce.
