  • 1 cup fresh cranberries (or dried cranberries)
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup bread crumbs
  • 2 eggs
  • 1 tsp fresh thyme
  • 1 tsp fresh rosemary
  • 1 cup chicken broth
  • 3 tbsp butter
  • 2 tbsp flour

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a loaf pan with butter.
  2. In a large bowl, combine the ground turkey, chopped onion, minced garlic, cranberries, bread crumbs, and herbs. Crack in the eggs and mix gently.
  3. Transfer the mixture into the greased loaf pan, shaping it into a loaf.
  4. Bake for 50-60 minutes or until the internal temperature reaches 165°F (74°C).
  5. While the meatloaf bakes, prepare the gravy by melting butter in a saucepan over medium heat. Whisk in flour to make a roux and cook for about 1-2 minutes.
  6. Gradually whisk in the chicken broth, simmering until thickened. Season with salt and pepper to taste.
  7. Once the meatloaf is done, let it rest for about 10 minutes before slicing.
  8. Serve with a drizzle of gravy over the meatloaf.

Notes

Substitutions: Use ground chicken instead of turkey or oatmeal for a gluten-free option. Fresh cranberries can be substituted with cranberry sauce.
