- 1 lb ground turkey
- 1 cup pumpkin puree
- 1/4 cup fresh sage (or 1 tbsp dried sage)
- 2 cloves garlic, minced (or 1 tsp garlic powder)
- 1 onion, finely chopped
- 1/2 cup breadcrumbs (or oats for gluten-free)
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- 1 cup chicken broth
Instructions
- Preheat your oven to 400°F (200°C).
- Combine ground turkey, half of the chopped onion, garlic, breadcrumbs, Parmesan, salt, and pepper in a bowl.
- Roll the mixture into golf ball-sized meatballs and place them on a lined baking sheet.
- Bake the meatballs for 20-25 minutes, flipping halfway through.
- Heat a skillet over medium heat and sauté the remaining onions until translucent.
- Stir in pumpkin puree, chicken broth, and chopped sage. Simmer until heated through.
- Place the cooked meatballs into the sauce to soak for a few minutes.
- Serve hot, preferably over creamy polenta or with crusty bread.
Notes
Chilling the meatballs for 30 minutes before baking helps maintain their shape. Adjust seasoning to taste.
