  • 1 cup pumpkin puree
  • 1/4 cup fresh sage (or 1 tbsp dried sage)
  • 2 cloves garlic, minced (or 1 tsp garlic powder)
  • 1 onion, finely chopped
  • 1/2 cup breadcrumbs (or oats for gluten-free)
  • 1/4 cup grated Parmesan cheese
  • Salt and pepper to taste
  • 1 cup chicken broth

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Combine ground turkey, half of the chopped onion, garlic, breadcrumbs, Parmesan, salt, and pepper in a bowl.
  3. Roll the mixture into golf ball-sized meatballs and place them on a lined baking sheet.
  4. Bake the meatballs for 20-25 minutes, flipping halfway through.
  5. Heat a skillet over medium heat and sauté the remaining onions until translucent.
  6. Stir in pumpkin puree, chicken broth, and chopped sage. Simmer until heated through.
  7. Place the cooked meatballs into the sauce to soak for a few minutes.
  8. Serve hot, preferably over creamy polenta or with crusty bread.

Notes

Chilling the meatballs for 30 minutes before baking helps maintain their shape. Adjust seasoning to taste.
