Ingredients

  • Fresh bell peppers

  • Carrots
  • Mushrooms
  • Soy sauce
  • Minced garlic
  • Ginger
  • Sesame oil
  • Fresh herbs (cilantro or chives)

Instructions

  1. Cook the noodles by boiling water in a large pot. Add your Canton noodles and cook according to package instructions (3–5 minutes). Drain and toss with sesame oil.
  2. Sauté the aromatics in a skillet over medium heat with sesame oil, adding minced garlic and ginger until fragrant (about 30 seconds).
  3. Add the vegetables, starting with harder ones (carrots, bell peppers) before adding softer ones (bok choy, mushrooms). Sauté until tender yet vibrant (4–5 minutes).
  4. Combine the noodles with the sautéed veggies and pour in soy sauce, tossing to coat.
  5. Finish by tasting and adjusting seasoning, adding more soy sauce or maple syrup if necessary. Plate and garnish with fresh herbs.

Notes

For best results, avoid overcrowding the skillet while sautéing to ensure vegetables are charred, not steamed.
