- 1 cup banana ketchup
- 8 oz mushrooms (shiitake or button, sliced)
- 4 cloves garlic (minced)
- 1 onion (diced)
- 2 tbsp soy sauce
- 2 tbsp olive oil
- Fresh basil leaves (for garnish)
- Black pepper or chili flakes (to taste)
Instructions
- Cook the Pasta: Boil salted water and cook spaghetti until al dente, reserving a cup of pasta water.
- Sauté the Aromatics: Heat olive oil, adding minced garlic and diced onions until fragrant and translucent.
- Add the Mushrooms: Toss in sliced mushrooms, sautéing until tender.
- Create the Sauce: Stir in banana ketchup, soy sauce, and reserved pasta water, adjusting consistency. Season with black pepper or chili flakes.
- Combine with Pasta: Add cooked spaghetti to sauce, tossing until coated. Add more pasta water if needed.
- Finish with Herbs: Remove from heat, fold in fresh basil leaves.
- Serve Warm: Plate and garnish with black pepper or basil.
Notes
Use a large skillet for even sautéing. Be careful not to overcook mushrooms.
