A delightful mashup of Filipino comfort food and Italian tradition, this Vegan Filipino Spaghetti features sweet banana ketchup and earthy mushrooms for a rich umami flavor.


Ingredients

  • Spaghetti or any long pasta (whole grain or gluten-free options)
  • 1 cup banana ketchup
  • 8 oz mushrooms (shiitake or button, sliced)
  • 4 cloves garlic (minced)
  • 1 onion (diced)
  • 2 tbsp soy sauce
  • 2 tbsp olive oil
  • Fresh basil leaves (for garnish)
  • Black pepper or chili flakes (to taste)

Instructions

  1. Cook the Pasta: Boil salted water and cook spaghetti until al dente, reserving a cup of pasta water.
  2. Sauté the Aromatics: Heat olive oil, adding minced garlic and diced onions until fragrant and translucent.
  3. Add the Mushrooms: Toss in sliced mushrooms, sautéing until tender.
  4. Create the Sauce: Stir in banana ketchup, soy sauce, and reserved pasta water, adjusting consistency. Season with black pepper or chili flakes.
  5. Combine with Pasta: Add cooked spaghetti to sauce, tossing until coated. Add more pasta water if needed.
  6. Finish with Herbs: Remove from heat, fold in fresh basil leaves.
  7. Serve Warm: Plate and garnish with black pepper or basil.

Notes

Use a large skillet for even sautéing. Be careful not to overcook mushrooms.
