Description

Delicious vegan meatballs made with sweet potatoes and earthy spices, perfect for any gathering.


Ingredients

  • 2 medium sweet potatoes, peeled and cubed
  • 2 cups mushrooms, chopped
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 cup oats or bread crumbs
  • 2 tablespoons flaxseed meal mixed with 5 tablespoons water
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • Chili powder, to taste
  • Oregano, to taste

Instructions

  1. Preheat your oven to 400°F. Roast sweet potatoes for 25-30 minutes until tender.
  2. Heat a skillet with olive oil over medium heat, add onion and garlic, and sauté for 5 minutes.
  3. Add the chopped mushrooms to the skillet and cook for 5-7 minutes.
  4. Combine the roasted sweet potatoes, sautéed mixture, oats, and flaxseed meal in a large bowl.
  5. Season with salt, black pepper, and spices, mixing until sticky but manageable.
  6. Form the mixture into golf ball-sized meatballs and place them on a lined baking sheet.
  7. Bake for 25-30 minutes, flipping halfway through until golden brown.
  8. Let cool for a few minutes, then serve with your favorite sauce or in a meal.

Notes

For a different texture, swap sweet potatoes for butternut squash or mushrooms for lentils/beans.
