Ingredients

- 4 cups fresh greens (Romaine or kale)
- 2 cups cherry tomatoes, halved
- 1 cucumber, sliced
- 1 bell pepper, mixed colors and sliced
- 1/2 red onion, thinly sliced
- 1 avocado, diced
- 1/4 cup fresh herbs (parsley, cilantro, or basil)
- 1/4 cup extra virgin olive oil
- 2 tablespoons freshly squeezed lemon juice
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions
- Rinse the greens, chop them into bite-sized pieces, and place them in a large serving bowl.
- Halve the cherry tomatoes and slice the cucumbers and bell peppers into thin strips. Toss these into the bowl with the greens.
- Thinly slice the red onion and add it to the mix.
- Dice the avocado last and gently toss everything together.
- In a small bowl, whisk together the minced garlic, olive oil, fresh lemon juice, salt, and pepper until well combined.
- Drizzle the dressing over the salad just before serving to keep everything crisp. Gently toss to coat the vegetables.
